Since it was founded, the winery has remained true to an approach based on the individual processing of each vineyard. This method has enabled us to acquire an in-depth knowledge of how each parcel or sub-zone behaves under the multiple conditions we have encountered.
At Viñas del Cénit, we are privileged to work with exceptional raw materials. Our winery receives grapes of the highest quality in optimal conditions. We use a sorting table, though in many cases, only minimal selection is required.
From there, all that remains to be done is simply to guide the grapes through a low-intervention process, allowing their full potential to come to the fore.
The winery’s structure and equipment are in line with this work philosophy. We use open stainless steel vats with temperature control, inspired by traditional wine presses, with a maximum capacity of 4,000 kg, thereby ensuring we preserve the essence and unique nature of each vineyard.
